Bissap (Hibiscus) and Moringa Muffins
Today, I'd like to share with you a recipe that's perfect for a children's snack, with lots of pep, freshness and vitamins. A recipe I made on purpose when I received my package from Kwenda Word.

Focus on Bissap
Infusions of hibiscus have been used as a remedy since ancient Egypt, where they were used to lower body temperature in case of heat stroke, as an aphrodisiac, and against insomnia and restlessness. They are still used today in many traditional medicines.
Bissap regulates blood pressure and heart health. Hibiscus infusion is an excellent source of antioxidants. Hibiscus has antiseptic, antibacterial, anti-inflammatory and antiviral properties, and is said to help cure colds, coughs, angina, rhinitis, flu and all upper respiratory tract inflammations.
Focus on Moringa
Moringa is a tree whose leaves are more nutritious than kale and offer powerful anti-inflammatory benefits comparable to those of turmeric. It is grown abundantly in the tropics and is known in ancient cultures as the "Tree of Life".
Moringa is packed with protein, essential amino acids, 27 vitamins and 46 antioxidants. It has a green flavor similar to matcha and adds a healthy, sweet green touch to smoothies, savory dishes and sauces.
The powder smells like a sweet, peppery version of green tea and adds a healthy burst of green to everything it touches. It has the taste of matcha, enriched with notes of blue-green algae reminiscent of spirulina. These muffins are so fresh, delicious and tangy thanks to the bissap.
To make this recipe, I used Kwenda Word's bissap powder. A powder that I find very good, without sand and that can be easily integrated into our preparations for cakes, juices...
Ingredients
- 125g flour
- 180g unsweetened condensed milk
- 1 tablespoon moringa
- 1 tablespoon bissap powder
- 50g pure cane sugar
- 80g butter
- 1/2 sachet yeast
- 1 egg
- 75g chocolate chips
- Some Kwenda bissap candies
Preparation
- Preheat the oven to 180°C and place the muffin cases in the muffin tin.
- Mix the dry ingredients (flour, yeast, sugar, moringa and bissap) in a bowl.
- In another bowl, beat the egg into an omelette, then add the melted butter and milk.
- Make a well in the dry mixture and stir in the liquid mixture and chocolate chips. Mix lightly.
- Fill the molds 2/3 full with pastry, add a few chocolate chips to some and bissap candies to others, or bissap powder on top, and bake for 20-25 minutes in an oven preheated to 180°C. Then leave to cool.
