Lactose-free pancakes with peanut milk, peanut caramel and caramelized peanuts (crazy peanuts)
It's all in the title. Recently, I started listing plant milks with African flavors on my blog.
Last week, I told you about peanut milk and all the benefits it can bring to our bodies.
Did you know that the fat contained in peanuts is a good fat? It contains phytosterols that help prevent the onset of certain cancers, such as colon, breast, lung and prostate cancer.
Peanuts are also rich in fiber and magnesium, important nutrients in the fight against type 2 diabetes.
Peanuts are surprisingly rich in zinc, manganese, copper, phosphorus, magnesium, vitamin E, potassium, iron, selenium, vitamins B1 and B6, pantothenic acid, folate and fiber.
"Peanuts are a real health ally when added in moderation to a varied, balanced diet. Among other things, it helps protect the cardiovascular system and prevent certain chronic diseases.
Today, I wanted to try out a dairy-free pancake recipe with my children. For this, I used the peanut milk I had made. The pancakes were topped with a peanut caramel and caramelized peanuts.
Ingredients
- 250ml peanut milk
- 115g mixed or normal flour
- 2 eggs
- 15g butter
- 30g coconut blossom sugar or white sugar
- 1 sachet vanilla sugar
- A pinch of salt
Preparation
- Place the flour in a bowl with the salt and sugar.
- Make a well in the middle and pour in the eggs.
- Mix gently. When the mixture becomes thick, add the peanut milk gradually.
- Mix to a fairly fluid paste.
- Add the melted butter and mix well.
- Cook the crêpes in a hot, lightly buttered frying pan.
- Cook for about a minute on each side and the pancake is ready.
I accompanied these pancakes with a peanut milk caramel. I'll post the recipe once I've perfected it.
