
Today is Wednesday, the day I do cooking activities with my children. It turns out that these activities are fun and help the children to develop their creativity.
I help them bake the cookies, but they do just fine without me.
Here are my moringa cookies filled with white chocolate and bouye.

This back-to-school season, I'm going to try to offer a series of snacks for children, with or without gluten, but above all healthy and in most cases incorporating African products.
For those who don't know, moringa is a super-fruit that's good for your health. Moringa is packed with protein, essential amino acids, vitamins and antioxidants.
With a taste similar to matcha tea, it can be used to color your desserts.
These cookies are delicious, the moringa blends superbly with the bouye as always.

Ingredients
- 245 g flour
- 5 to 10 g moringa, as desired
- 140 g soft butter
- 1 egg yolk
- 60g coconut blossom sugar or more as desired
- 1 teaspoon liquid vanilla
For the bouye and banc chocolate ganache
- 50g white chocolate
- 1 teaspoon milk powder
- 2 tsp baobab powder
- water trickle
Cookie preparation
- Mix the sugar, butter and flour in a bowl until a sandy paste forms.
- Make a well, then add the egg yolk and vanilla. Mix well and form into a ball. Chill for 30 min.
- Roll out the dough between two sheets of parchment paper.
- Using a cookie cutter of your choice, cut the dough into the desired shapes.
- Preheat the oven to 180° and bake for 10 to 12 minutes, with the heat turned up.
Preparing the ganache
- Melt the white chocolate in the microwave with a splash of water for 1 min, then mix with the bouye and milk powder. Mix and add a dash of water.
- Leave the ganache to cool, then using a piping bag, pipe each cookie and close with another cookie if you want to double them, otherwise leave as is.
- Set the cookies aside for at least 30 minutes to allow the ganache to set, then enjoy!!
